COREcruitment is partnering with an established premium restaurant group on the search for a Senior Sous Chef for its high-volume Pan Asian restaurant in East London. The Senior Sous Chef will be the Head Chef's right hand, running busy services to spec and leading the team day to day. The client is looking for a Senior Sous Chef who can start within two weeks.

The Senior Sous Chef role

Act as the Head Chef's right hand in running a high-volume kitchenRun the kitchen in the Head Chef's absenceLead services of up to 600 covers a day, across à la carte and private diningMake sure every dish goes out to group specs, with consistent standards on every serviceManage and develop the junior team, including Chefs de Partie and CommisTrain the brigade on dishes, specs, food safety and kitchen standardsOwn ordering, stock control, rotas and food safety complianceSupport the Head Chef on GP, labour and monthly performance targets

About you

Senior Sous Chef or experienced Sous Chef background in a premium, high-volume restaurantPan Asian, Japanese or Southeast Asian kitchen experience strongly preferredWok, robata grill or live-fire experience an advantageOrganised, calm under pressure and confident leading busy servicesA hands-on trainer who brings junior chefs onAvailable to start within two weeks
