Support the Sous Chef in leading a brigade of 15-20 chefsRun the kitchen in the Sous Chef's absenceManage ordering, stock control, rotas and food safetyTrain and develop the brigade, including Chefs de Partie160-200 covers on a busy weekend, with all food prepared fresh on site
