Supports Executive sous Chef and Executive Chef in daily operations managementLeads the team in absence of his superiorsWhen necessary, manage autonomously one of the hotel’s kitchensInteract with clients in Portuguese or English, presenting dishes or show cookingParticipates in new or special menu’s elaborationSupports in HACCP system control and maintenancePerforms administrative tasks such as requisitions, inventories, technical filesHelp in the preparation and design of all food and drinks menusManage and train kitchen staff, establish working schedule and assess staff’s performanceOrder supplies to stock inventory appropriately
Who are you?
At least 3 years of experience in similar jobTraining in cuisine / pastryExperience in restaurants or 5* hotelsProficiency in Portuguese and English necessaryPlanning and organization skillsAbility to train others and share knowledgeUnderstanding of various cooking methods, ingredients, equipment and proceduresExcellent record of kitchen and staff managementAccuracy and speed in handling emergency situations and providing solutionsBS degree in Culinary science or related certificate would be a plus
