This is an Italian restaurant offering classic traditional cuisine in a simple and comfortable manner.Responsibilities
Responsible for the day-to-day running of the kitchen.Leading a team of 5 chefsShift and rota managementStock controls, ordering, quality controlManagement of budget, cost control and marginRecruitment and training of the kitchen teamEnsure full compliance with food safety, hygiene and security regulations
Personnel
Experience of Chef de Cuisine / Head ChefMust have classic Italian Cuisine experience ‘trattoria’ styleCurrent or recent experience in Italy preferredCulinary training / diplomaCertification on HACCP standards and other food hygiene rulesPassionate about your jobAbility to manage costs, negotiate and build relationships with suppliersExperience managing, working with and mentoring a young and dynamic teamPositive and motivated attitudeEnglish speaking
You must have a solid understanding of kitchen work practices and regulations; including finance and back office functions.
