Cuisine: Seasonal British plates, rustic yet refined.Menu: À la carte lunch/dinner, bar menu, and event menus.Service: 120–140 covers during pre-theatre rush.Hours: 48, closed Sundays.Kitchen: Josper oven, open fire, charcoal grill.The Ideal Sous Chef:
