Campsbourne School - Commis Chef Apprenticeship

The basic preparation of food e.g. fresh vegetables, salads, snacks, sandwiches and drinks. Simple cooking duties. To check the menu before service and to ensure that all food is correctly stored at the right temperature and ready for serving. To wash, sterilise all equipment and utensils used for the preparation and cooking in the morning. To check menu and meal numbers of serves, prepare dining area take table and chairs from storage area and arrange layout. To place water jugs at designated areas, together with cutlery and appropriate equipment for disposal of used cutlery, crockery and food waste. To serve pupils/staff in a sympathetic and understanding way, being aware of religious and cultural differences and encouraging pupils to try new foods. To be aware of clients with special dietary needs (from the list provided) and ensure they are met. To reinstate dining area at the end of lunch period; clear plates, cutlery and food waste; clear and wipe tables, serving area and hot plate; sweep floor and spot mop any spillages; wipe wall around waste bucket; and stack away tables. Dispose of food waste in bins outside the kitchen. To provide cover for the assistant cook post as required.

Training:

You will be assigned a designated Vocational Trainer. Alongside the tutor, you will agree on a personal learning and development plan, setting a timetable of learning activities in preparation for the End Point Assessment (EPA). 

The tutor will meet with the apprentice regularly either online or face to face to complete and review assessments, provide further coaching where required and agree the next steps of learning. 

Level 2 Commis Chef Apprenticeship Standard Qualification Functional skills maths and English (if required)

Training schedule has yet to be agreed upon, further details will be made available at a later date



Training Outcome:
Progression from this apprenticeship is expected to be into a Chef de Partie role or Senior Production Chef role
